
1/2 lg. red onion, diced
1 red pepper, diced
1 lb. chicken
1/2 lb. Monterey Jack cheese, grated
1 can black beans, rinsed
1 can corn, drained
1 lg. handful cilantro, chopped
soft taco size flour tortillas
olive oil
Oil bottom of large saute pan and heat. Add onion and peppers, cook until brown. Remove from pan and place in bowl. Cut chicken into bite sized pieces and saute until cooked through. Remove from pan and add to bowl with onion mixture. Add grated cheese, beans, corn and cilantro and mix well. Warm tortillas and fill with about 2 T. of mixture. Roll and place on cookie sheet. Bake at 400 degrees for about 15 minutes.

Now I don't follow the recipe as written. As far as the ingredients go I use everything BUT the chicken and also add a red bell pepper.
I don't cook the onions and peppers. I put EVERYTHING chopped up STRAIGHT into the bowl.
I warm the tortillas (we use wheat also) and then roll and bake.
We dip them in a fiesta type ranch dressing but really they don't need anything at all, I don't think.
The leftover mix is GREAT mixed with lettuce as well. That is my lunch today!
I don't love the chicken in the mix and that is just my own personal opinion.
