southwest egg rolls



1/2 lg. red onion, diced
1 red pepper, diced
1 lb. chicken
1/2 lb. Monterey Jack cheese, grated
1 can black beans, rinsed
1 can corn, drained
1 lg. handful cilantro, chopped
soft taco size flour tortillas
olive oil

Oil bottom of large saute pan and heat. Add onion and peppers, cook until brown. Remove from pan and place in bowl. Cut chicken into bite sized pieces and saute until cooked through. Remove from pan and add to bowl with onion mixture. Add grated cheese, beans, corn and cilantro and mix well. Warm tortillas and fill with about 2 T. of mixture. Roll and place on cookie sheet. Bake at 400 degrees for about 15 minutes.

Okay.

Now I don't follow the recipe as written. As far as the ingredients go I use everything BUT the chicken and also add a red bell pepper.

I don't cook the onions and peppers. I put EVERYTHING chopped up STRAIGHT into the bowl.

I warm the tortillas (we use wheat also) and then roll and bake.

We dip them in a fiesta type ranch dressing but really they don't need anything at all, I don't think.

The leftover mix is GREAT mixed with lettuce as well. That is my lunch today!

I don't love the chicken in the mix and that is just my own personal opinion.

a track meet, his second, my first

Hunter had a track meet yesterday.

I got there just in time to see him start his first race!

If you've ever had shin splints you know how painful this is.

He ran the mile in 6 minutes. With shin splints!

His coach wouldn't let him do the 2 mile race he had for his next event, and as a mother I thank her! Watching him run was painful for me to watch, knowing that he was hurting. I cringed every time his feet hit the track. But he pushed it aside and was great!

I can't wait to see many more track meets in the old Mustang Canyon!

I'm trying to be better at posting here.

I am thinking of including a picture a day over at my 365 blog and have it be a "what I saw today" blog to go along with all 365 days.

The kids are doing GREAT.

Hunter is running track, Delaney is enjoying her friends, Dylan is still my little home body, and Luke...well. Luke is great too, still full of ENERGY 24/7. And I'm not exaggerating! We need to find something his little body can do each day to let it all out!

A trip to the trains is on our schedule this week and the park!

Today I get 4 hours alone! Target should be included in this 4 hours. And my kindle.

I've decided not to run Laguna 1/2 Marathon.

Making that decision above has been a huge relief for me and my mental state. BUT, it won't stop me from ever doing one again. I'll do one again, just not right now.

I took my sewing machine out, blew off the dust and wiped it down. Now if I use it, I will be heading in the right direction.

I'm going to be 40 next year. I think it's time for some new goals. I'll get back to you on those!

It's Thursday and that means a pretty simple dinner around here.

We made our yummy bean/cheese/chicken quesadillas.

Then I went all out and tried a fancy dessert.

Banana Lemon Pudding Cake.

Not too shabby for a Thursday dessert!

And as Rachael Ray would say....Yum-O.

luke's time

During the week I try to do something with Luke each day.

It doesn't always work out that way, and if it does, it isn't GRAND and GLORIOUS each day.

We love the park. To play with friends and to go to cool places!

I've been wanting to take him there ever since we moved here.

We finally went!

It certainly wasn't grand or glorious, but interesting it was.

Interesting if you like airplanes, seeing one fireman, and helicopters.

Another adventure he loves is the dinosaur museum. Which isn't really a dinosaur museum at all. In truth it is a building that houses mammoth bones and interesting facts about the fossils they found RIGHT HERE IN OUR HOME TOWN!

We planted a bean plant the last time we went.

Luke asks to go there almost every day! If is didn't cost ME $8 (he's free) I really wouldn't mind going every day. He LOVES it!

la jolla tide pools

We took a much needed DAY AWAY to spend at the Tide Pools on Thursday.

We went with two families in our new ward.

Actually I kind of invited our family along.

oops.

Sometimes I get ahead of myself and just assume it's okay to do that.

We did have a BLAST! The kids had the best time and I made two new friends!

Hunter went to the grocery store with me last week.

He told me he's ALWAYS wanted to try 3 things.

1. To open one.

Well, he didn't get his adventurous side from me. And if you don't think this is an adventure then clearly I am not a thrill seeker, because to me...coconuts are an adventure.

Well, two out of three isn't bad. He didn't like the milk or the meat.

But hey! He can now say he's successfully tried A COCONUT!
